    Estudio de prefactibilidad de fabricación de vino a base de pitahaya en Rocafuerte, Manabí, Ecuador

    This study evaluated the technical, economic, and financial prefeasibility of producing wine from red pitahaya (Hylocereus undatus) using surpluses generated in the production chain of Rocafuerte, Manabí, Ecuador. From a technical perspective, the fruit showed suitable physicochemical properties for fermentation, yielding a product with acceptable levels of acidity, pH, sugars, and alcohol content, complemented by favorable organoleptic evaluations. Market analysis revealed a consumer segment interested in differentiated fruit wines, driven by sustainability, innovation, and local origin, representing an emerging niche in the regional market. The economic and financial analysis demonstrated the project’s viability, with a positive Net Present Value, an Internal Rate of Return above the cost of capital, and an attractive payback period, although sensitive to variations in price, demand, and production costs. Furthermore, risk analysis through Monte Carlo simulations confirmed the feasibility of the project while highlighting the need for mitigation strategies to enhance financial stability. Overall, the results indicate that producing red pitahaya wine is a viable agro-industrial diversification strategy that contributes to sustainable resource utilization and local economic development.
