Se evaluaron factores macroeconómicos, demográficos y tendencias gastronómicas, además de un estudio de mercado para conocer la demanda, los hábitos de consumo y la competencia. El análisis técnico definió costos, infraestructura e insumos, garantizando viabilidad operativa y cumplimiento normativo. Desde el ámbito organizacional y legal, se establecieron roles, estructura empresarial y requisitos regulatorios. El estudio financiero proyectó inversión, rentabilidad y estrategias de mitigación de riesgos mediante un enfoque mixto con herramientas como la matriz FODA. Este trabajo respalda la creación del restaurante como una alternativa innovadora para diversificar la oferta gastronómica en Medellín y atender una demanda insatisfecha.The pre-feasibility study analyzes the feasibility of establishing an Ecuadorian gastronomy restaurant in Medellín, identifying a market niche that has been little explored and taking advantage of its growing international acceptance. Macroeconomic factors, demographics and gastronomic trends are evaluated, in addition to a market study to analyze demand, consumption habits and competition. The technical analysis defines costs, infrastructure and supplies, ensuring operational viability and regulatory compliance. From an organizational and legal standpoint, roles, business structure and regulatory requirements are established. The financial study projects investment, profitability and risk mitigation strategies using a mixed approach with tools such as the SWOT matrix.
