    Análisis de factibilidad para la prestación del servicio de alimentación en los Programas Escolares en Panamá

    In order to determine the opening of a new operation of the Creser Group and search for its international expansion, a proposed guideline for carrying out a feasibility study was examined and analyzed. With the application of the method, in addition to knowledge about school feeding programs in Colombia (PAE) and active participant as a food service provider, the search for growth to be a provider in similar initiatives for other governments in neighboring countries is an ambitious projection -- Among the measures that the Colombian Ministry of Education has to improve the conditions of children and adolescents enrolled in public institutions, a strategy is implemented which involves the creation of a school feeding program for these assistants -- Its main objective is to strengthen their permanence in school; in addition to improving their living conditions to those in vulnerable areas by improving their learning ability through the provision of a food supplement -- In Colombia, school feeding programs have allowed the prioritization and targeting of vulnerable populations: indigenous, victims of armed conflict, and others with nutritional and / or socio-economic vulnerability -- PAE's efforts are centered on two focuses: the selection of educational institutions according to geographical location and level of education is whether it is preschool, primary or secondary; in the other hand, is the selection of beneficiaries goes in accordance with the factors before -- The country is not the only one in Latin America implementing this type of program -- The initiative expands to all countries in the region with the support of the Food and Agriculture Organization of the United Nations -- Its main purposes are the eradication of hunger, food insecurity and malnutrition, where the government of each country plays an important role in the development of these objectives, towards a sustainable management of resources such as land, water, air, etc. for future generations. (FAO, 2017) -- Countries like Brazil, Guatemala, Ecuador, Salvador, are already part of this -- It is intended that other countries implement these types of plans that align with the dream that has been drawn by FAO of Latin America and the Caribbean without Hunger 2025 -- Creser Group, with more than eight years of experience in providing food services through school restaurants in different educational institutions in Colombia as one of the government's suppliers in the PAE, is a business group made up of private economy companies such as: Alimentarte Foundation, Nutriser Colombia and Natulpan; the excellent operation of the program has given it recognitions that make it one of the most important groups in the sector -- Thanks to the growth of the group in its operation and the opportunities for expansion that occur both inside and outside the country for the drive to eradicate hunger and improve people's living conditions, Creser seeks to carry out a feasibility study with a view to exporting Service of school restaurants to the country of Panama; A country that due to its great economic growth and stable government policies become an epicenter for the search of new markets -- The Panamanian Food Security Program acts in a similar way as the other programs under FAO's leadership to guarantee the right to every person to be free from hunger -- Thus, the Creser group looks for be directly involved as a provider because it is viable

    Aporte de la estrategia del marketing de destino para el posicionamiento de Bogotá como destino gastronómico

    This study arose from the limited documentation on the gastronomic offer and its opportunities in Bogotá and sought to identify the gastronomic aspects that Bogotá has to contribute to a destination marketing strategy. It was an exploratory and mixed research, with a mostly descriptive component, which was supported by the analysis of structured and semi-structured interviews with people involved in the field of gastronomy and tourism, surveys of diners and secondary sources. Among the main findings of the field work, it is highlighted that Bogotá has the elements to consolidate itself as a gastronomic tourist destination, since in the city there is a varied culinary offer, the development of gastronomic products and of the food industry, the rise of market places, fairs and gastronomic outreach events, as well as culinary research and training centers. In addition, while tourists seek experiences related to local culture, nationals are interested in a sophisticated offer of foreign culinary options. This research suggested that the capital has yet to explore different destination marketing strategies based on the perceptions of residents, national visitors and international tourists, as well as messages that highlight the uniqueness of the city in terms of its gastronomic scene, areas and gastronomic routes, cultural diversity, tourist infrastructure, and the type of visitors it attracts. The above is constituted as a fundamental aspect for the positioning of Bogotá as a gastronomic destination worldwide. The present degree work presented limitations for its development due to the global pandemic of the coronavirus (COVID-19), which made it difficult to survey foreign visitors and tourists and affected the measurements regarding the evolution of tourism, consumption and the gastronomy sector, in the short and medium term.

    Nivel de formalización de restaurantes de compra media en el mercado de foodservice en Colombia

    Los cambios en el estilo de vida del colombiano y el auge del consumo por fuera del hogar, han revestido de gran importancia el mercado de foodservice que se encuentra en desarrollo en Colombia -- Estos cambios han generado una mayor la oferta de restaurantes y por ende exigen cada vez un mejor desempeño y servicio por parte de los mismos -- Siendo los restaurantes de menú fijo de estratos 3 y 4 aquellos que constituyen el mayor número de establecimientos del sector, se hace relevante su análisis para conocer el nivel de formalización actual en términos de variables como gestión financiera y administrativa, tecnología, mercadeo, operación logística y gestión humana -- Así mismo, se hace necesario definir un perfil ideal para este tipo de establecimientos sobre el cual se recomienden prácticas y acciones que permitan superar las oportunidades de formalización y cerrar la distancia entre la situación actual y la ideal, así como generar conciencia en el sector sobre la necesidad del apoyo de actores secundarios del sector —academia, gremio y proveedores— para potencializar el desarrollo de este tipo de establecimientos y generar un mayor aporte a la economía del país
