    Sistemas Regionales de Innovación Gastronómica: innovación e integración de actores y sectores desde la gastronomía para el crecimiento socioeconómico del municipio de San Jerónimo, Antioquia

    This work is an exploration of the economic, social and cultural actors of the municipality of San Jerónimo, around the approach of a Regional Innovation System mediated by gastronomy, energizing connections and relationships between the different actors of the municipality of San Jerónimo -- The research has addressed theories, strategies, models and developments of the Regional Innovation Systems, from their origins at the global level to their interventions in Latin American contexts and their relation to the Gastronomy concept, allowing the leverage of the same sectors in a specific context -- For this, a documentary review of the following topics was carried out: Gastronomy, Regional Systems of Innovation and Gastronomic Innovation and their relationship to show connections between sectors through it; In addition, interviews are held with the Mayor of San Jerónimo and its Notary to establish the relationship between the sectors permeated by the gastronomy in the municipality; to the Hotel sector as one of the main mobilizers of tourism, having Gastronomy as a tourist attraction; to tourism associations to observe interactions between hotels, restaurants, local producers, financial entities; and associations that represent the agroindustrial sector, to identify their needs and potentialities around gastronomic themes and their interaction; In addition, in this process of inquiry to individuals and organizations, a focal-level discussion was held with the associations of local agricultural products in the framework of a meeting to promote networks in the area -- In a second stage, identify the specific needs and challenges that allow recognizing the meeting points of the sectors for the construction of an RIS and propose the possible execution routes with strategies from the conception of a FrameWork and its possible SRI interactions -- For the municipality of San Jerónimo, Antioquia
