Ítem Investigación sobre el conocimiento y la aceptación de la gastronomía huilense en la ciudad de Medellín(Universidad EAFIT, 2022) Trujillo Díaz, Liliana; Restrepo Ayala, Camilo ErnestoNowadays, tourism is closely linked to the gastronomic culture of each region that is to be promoted, and due to this it is important to preserve Colombian gastronomy and promote it so that it becomes one of the motivators of tourism in the country. For this reason, the present research evaluates the knowledge and acceptance of a gastronomic offer of the typical Huila food in the diners of Medellín. This work was developed through qualitative-exploratory research, and tools such as bibliographic research, interviews, and group sessions with inhabitants of the city of Medellín were used. In the sessions, three typical dishes from the Huila region were given to taste and consumer knowledge was analyzed, as well as the perception and motivators of consumption regarding Huila’s gastronomy. As a result, the lack of knowledge of Huila food was identified; however, the dishes given to taste were accepted thanks to the ingredients with which they are made and the flavor that characterizes them; in addition, it was evidenced that living the experience of the culture of the region would be one of the motivators of the consumption of the gastronomy of Huila in Medellín.
