This has given rise to the development of different business models around food such as bars, gastrobars, gourmets, food trucks, fast food, deliveries, and street food. Precisely this last business model shows important opportunities for improvement in areas such as food quality, good manufacturing practices and formality of the employment generated. Even so, street food continues to be widely accepted in the world, and mainly in developing countries. Particularly in Colombia, 56% of those interviewed are inclined towards street food, and 20% consume it at least once a week according to the results of a survey carried out. Mexican taquerías are a food that has gained great relevance in the gastronomy of Bogotá, however, its main focus is the high-value gourmet restaurant. This is why the objectives of this degree project are: to evaluate the feasibility of a traditional Mexican taquería with a street spirit for the city of Bogotá, through different studies such as the environment, market, technical, legal, administrative and financial. Finally, the results of this evaluation indicate that the taquería is not feasible under the initially established conditions and that an adjustment to the price of the products of $500 COP is made to make the proposed project feasible.
