Ítem Análisis estratégico del entorno, la industria y el mercado, para un negocio especializado en papitas fritas tipo francesas + toppings, dirigido al consumidor final en Medellín(Universidad EAFIT, 2018) Wildbret Montoya, Juan Felipe; Rojas de Francisco, Laura Isabel; Serrano Rivero, Sergio AndrésThe present research aims to diagnose, through a strategic analysis, the circumstances of the environment, the industry and the market faced a business specialized in french fries to the final consumer in Medellin -- The study focuses mainly on the consumer's knowledge of the product to base future business strategies -- As a method of study, an exploratory research was carried out with a mixed qualitative-quantitative methodological approach applied to three fronts of study as follows: in the first one the "desk research" technique was applied, allowing a documentary review of secondary sources to establish the macro business environment and characterization of the industry -- On the second front, interviews were conducted with entrepreneurs and chefs of the sector, as well as the use of a model of competitive analysis by Michael Porter, as well as the benchmarking tool for the category -- In the third and last consumer-related front, the focus group technique is applied to know the consumer's qualities of the product, and to complement the measurement a quantitative probabilistic research is developed throughout the city of Medellin through a face-to-face survey, with the purpose of establishing the different groups of generational consumers, the preferences and consumption habits of the chips where the main segmentation variable was age; using different multivariate analysis that facilitates the statistical treatment of data in a simple way -- The investigative exercise allowed to establish an attractive scenario for the future realization of strategic planning and the management of a business specialized in P. F. from the macro environment and the consumer itselfÍtem Comida fresca y saludable para llevar: estudio exploratorio de las actitudes de los extranjeros que visitan la zona rosa de Medellín(Universidad EAFIT, 2019) Ortiz Alzate, José Alejandro; Ceballos Ochoa, Lina María; Lema Vélez, Juan PabloMedellin is experiencing a boom in foreign tourism, which represents a great business potential to meet their needs, however, there are few studies that address this audience. This research is conducted with the interest of knowing the foreign tourist’s behavior toward fresh and healthy food in the Medellín’s City “Zona Rosa”. Eating habits and traditions vary from one culture to another; Healthy eating can be based on local eating patterns, using available foods and respecting the local culture. Results of 152 face-to-face surveys with foreigners in the context of the Zona Rosa de Medellín indicate that the most positive attitudes toward fresh and healthy food ready to go are in those foreign tourists over 35 years old, regardless of their gender. The continent of origin of these foreigners also affects their attitudes towards these types of food. These attitudes also affect the purchase intention of these consumers. The understanding of this public that visits the city of Medellín will allow marketing specialists to propose market strategies for new ventures and businesses.Ítem Estimación del valor de una franquicia para oferta: Caso de estudio en franquicias de comidas rápidas(Universidad EAFIT, 2016) Narváez Oviedo, María Fernanda; Herrera Echeverri, HernánEl presente trabajo aborda la metodología para la valoración de franquicia de comidas rápidas, al ser un modelo de negocio de amplia expansión a nivel mundial, pues permite aprovechar las capacidades financieras, de experiencia, de posicionamiento y de emprendimiento de franquiciante y de franquiciado -- Se aborda el tema considerando los elementos esenciales que diferencian el modelo de franquicias de cualquier otro negocio, como es el canon de entrada, regalías, tiempo de vigencia del contrato, etcétera, proporcionando orientación sobre la forma de manejarlos de una manera que genere una adecuada estimación valor -- Se realiza una descripción de las diferentes metodologías de valoración para empresas detallando las ventajas y desventajas en la aplicación de franquicias -- El ejercicio de valoración se realiza con base en la metodología de flujo de caja descontado y valoración por EVA, considerando en las proyecciones financieras los elementos propios del negocio de comidas rápidas por un periodo de cinco años -- La tasa a la cual se descuentan los flujos de caja (WACC) se estimó con base en la estructura de capital y beta de una canasta de diez empresas de franquicia de comidas rápidas de USA. Igualmente, se realiza análisis de sensibilidad al modelo y se determina la rentabilidad del inversionistaÍtem Estudio de factibilidad para la creación de una empresa dedicada a ofrecer comida rápida, saludable y en forma móvil en la ciudad de Manizales(Universidad EAFIT, 2016) Rendón Duque, Juan Felipe; Gentilin Gentilin, Mariano; Herrera Ruíz, Liliana MarcelaEn el presente documento se presenta un estudio de factibilidad para la creación de una empresa de comida rápida, saludable y de forma móvil en la ciudad de Manizales -- Para el efecto se llevó a cabo realizó un análisis del contexto socioeconómico de la ciudad para determinar la posibilidad de ofrecer comida rápida enmarcada en el concepto de fast good, mobile food service -- En el estudio se siguieron los planteamientos de Baca Urbina (2010) que desarrollan las tres esferas del conocimiento que comprenden y dan cuenta de la viabilidad del mercado, la técnica y la financiera, que permiten determinar si la realización del proyecto es factible con el supuesto de un nivel de riesgo moderado -- La estrategia metodológica planteada se sustenta en un estudio de carácter descriptivo soportado en fuentes primarias y secundarias que pretenden dar cuenta de la situación actual del mercado y la real posibilidad de generar un nuevo negocio con las características antes descritasÍtem Identificación de un modelo de franquicia de la marca de Hamburguesas del Oeste y el plan de mercadeo para su comercialización(Universidad EAFIT, 2017) Ramírez Martínez, Guillermo Andrés; Salazar Gómez, Francisco Javier; Uribe Ochoa, Beatríz AmparoHamburguesas Del Oeste, is a Colombian company, founded 50 years ago, Del Oeste was the first organization that offered hamburgers in Colombia -- Like any other company, it has had drawbacks, but also moments of great achievements, the fact of having already reached 50 years of history, it’s a proof of this -- Although Hamburguesas Del Oeste has had moments of crisis, its current managers has been focused on a process of improvement that has been giving results, without forgetting what makes them unique and appealing to those loyal customers for so many years -- Del Oeste is a brand highly recognized and remembered in the city of Medellín and in the Valley of Aburrá -- Improvement of the product, as the main mission, and from this the improvement and standardization of processes and image are part of these achievements -- Today, it is possible to say that Hamburguesas Del Oeste can take an additional step in order to achieve greater market share -- As part of this, the top management of the organization was studying different business models that have used fast food chains around the world and, in this way, it was possible to identify that the franchise model is a highly winning model, not only for the company that allows it, besides increasing sales, to achieve a greater penetration in the market even reaching to markets that initially had not even gotten to conceive; on the other hand, it allows the franchisees to develop their own business so that they can have additional income and achieve, in some future, their financial independence -- Based on all of the reason, the problem that arose was to design a franchise model for Hamburguesas Del Oeste, a model that would be competitive in a franchise market that is becoming more and more powerful -- To achieve this, a market study had to be carried out for some models being developed in Colombia, such as McDonald's, Cocechas and Sandwich Q'bano, which allowed the model to be understood and identify those aspects that made them Successful and to construct a model that proposed value for those possible franchisees
