This trend represents a latent opportunity for future ventures that address this market, achieving the product attributes desired by the consumer. The object of this work is the understanding of the motivators and inhibitors for the consumption of baked products, as well as the prioritization of them and the knowledge of their causes within the most relevant consumer segment, in this case, women from the middle and upper middle class of the city of Medellín between 21 and 34 years old. Baked products are one of the categories with the greatest relevance and growth potential within the healthy basket. This research served to understand the type of motivation associated with the consumption of this type of food, which is a motivation focused on achieving balance between mind, soul and body, to detach from bad eating habits, to move away from industrialized foods and even to have a positive social impact in the community. In addition to this, the main motivators for the consumption of this type of food were identified, such as the contribution to health and nutrition, the freshness reflecting its naturalness, the tranquility of eating bread "without guilt" and finally medical reasons for intolerance to certain ingredients of traditional industrialized bread. It was also found that one of the essential characteristics of this type of product is good taste, since consumers are not willing to sacrifice taste to maintain a healthy diet.Publicación Modelo de negocio para bebidas funcionales Ceiba(Universidad EAFIT, 2017) Gil Giraldo, Jhonatan; Restrepo Mesa, Juan Eduardo; Uribe Marín, Ricardo; Uribe Ochoa, Beatríz AmparoEl presente documento, modelo de negocio para bebidas naturales Ceiba, es el trabajo de grado realizado por los autores con el fin de optar al título de magíster en Administración (MBA) de la Universidad EAFIT -- El cual esta soportado en los diferentes conceptos y metodologías de modelo de negocio y planes de negocio -- Por tratarse de un prototipo que busca definir los elementos estratégicos necesarios para su desarrollo, arrojó como resultado que la metodología más adecuada para ser aplicada es la ontología de modelo de negocios, conocida como Canvas, propuesta por Alexander Osterwalder -- Gracias a esta técnica se identificaron, desde el punto de vista estratégico, los elementos de generación de valor del negocio a partir del análisis de la propuesta de valor, los canales de distribución, las relaciones con los futuros clientes, las asociaciones clave, la segmentación del mercado y la estructura de costos, entre otros, en base a las oportunidades de negocio identificadas en el sector de bebidas en Colombia, para ser llevado al mercado del Valle de Aburrá
